I ate waaaayy too many vegetables today. I had a green monster smoothie for breakfast and leftover spaghetti squash baked ziti for lunch. See what I told you about weird days with lots of veggies? Clearly dinner didn’t need to be that healthy and I found this recipe the other day and it reminded me of one of my favorite chicken dishes (feta and sun dried tomato topped chicken) so I knew it would be good. Bonus, it was just as easy too!
My game plan was to make this with quinoa and mix the quinoa in the pan with the oil, garlic and sun dried tomatoes and make a big combined meal. But on my drive home I started day dreaming about the mac and cheese I plan on making for Easter this weekend and then when I realized I haven’t had any carbs yet today, I was sold on making mac and cheese. My body doesn’t like to go a whole day without carbs, usually I don’t go without like two hours without carbs. Carb-free, much like cheese-free is not a lifestyle I want to live. So I just put my chicken on top of my mac and cheese. Problem solved. And let me tell you, mac and cheese wins over quinoa EVERY SINGLE TIME. I love the original feta and sun dried tomato recipe but this may top it especially when you combine it into one dish like I did (or like I was planning on doing). Just be careful with your salt since the feta is salty too!

(I love saying ps btw, in case I think I’ve avoided it on the blog for the most part but I was just putting on a good front so you’d keep coming back, now I can be more like myself ;) ) There will be so much cooking this weekend. I was actually looking forward to the rainy day on Saturday just so I could have an excuse to be inside all day cooking. Now that its supposed to be nice, I’ll have to go for a walk or something and then cook all day. You didn’t really think I was going to stray too far away from the original plan did you? Sun dried Tomato and Feta Chicken
Adapted from Can I stay for Dinner?
- Fresh chopped garlic
- Chicken breast, cut into strips
- sun dried tomatoes
- crumbled feta
Heat oil from sun dried tomatoes in a pan over medium-high heat. Add in garlic and cook for 30 seconds to 1 minute. Add in chicken strips, then top chicken with salt, pepper and oregano evenly.
Cook until chicken is no longer pink. Add in sun dried tomatoes for the last few minutes the chicken is cooking. Finally, add in feta and toss to combine.
